Tamba Toji (Tamba master brewer group)

Tamba Toji are a group of toji (master brewers) who originated in Sasayama City, Hyogo Prefecture, and are known for their high level of skill in sake brewing. Descended from the Harima Toji lineage, they apply the skilled techniques known as Tamba-ryu (the Tamba style), particularly in the Nada Gogo (the Five Districts of Nada) area. Tamba Toji are counted among Japan's three major toji groups, alongside Nanbu Toji (Iwate Prefecture) and Echigo Toji (Niigata Prefecture). They are characterized by an approach that makes use of local rice and water and values traditional methods while continuing to innovate.
