About

Aizu sake was traditionally sweet and full-bodied in flavor. This was because Aizu is a mountainous region, where heavily seasoned preserved foods formed the basis of the diet. As the economy developed, fresh seafood came to be eaten in Aizu as well, and demand grew for what is known as Tanrei karakuchi sake (light, dry sake) to complement it. This Jozen (上撰) Honjozo is one of the first dry sakes of Aizu. Although it is dry, it preserves the umami that is characteristic of Aizu sake.
