The 55% polished junmai ginjo and the description's "華やかな香味" point to a moderately aromatic profile. The emphasized rich rice umami and low acidity of 1.3 suggest a round, fuller body with a softly sweet impression.

About

Brewed with care by two brothers at a brewery in the bitter cold of Hirosaki, Aomori, this limited Junmai Ginjo, 'Mohikan Musume,' uses Hohai-mai rice grown under contract and milled in-house to a polishing ratio of 55%. It is finished with the brewery's own yeast and groundwater filtered through Mount Iwaki. The sake balances rich rice umami beautifully with a vivid, fragrant aroma and flavor. Its eccentric label was born from a TV special, and the name reflects the idea of 'mohitotsu kan' (one more step of warming). It can be enjoyed at a wide range of temperatures, from chilled to warmed (kan). Its richness is the result of the cooperation and trial and error of the brewery's craftspeople, and a single sip conveys warmth and hope. Limited release in October.
