The description of Koshu grapes fermented together with rice and koji points to a pronounced fruity, wine-like aroma. The blend of wine and sake character and the softened acidity suggest a medium-light body with moderate sweetness.

About

This craft sake is made by fermenting Koshu grapes, rice, and koji together. Winemaking, where grape quality is paramount, and sake brewing, which involves many technical variables, were combined in an effort to raise the potential of the grapes using the rice and koji brewing techniques that Japanese brewers have cultivated over generations. The result is a drink in which the flavors of sake and wine blend and coexist, so it is hard to say whether it is sake, wine, or grape wine (budoshu). This year, we worked with grape growers and harvested the grapes after their acidity had settled somewhat, to improve their compatibility with sake. This craft sake was born through our connection with Nitta Shoten in Katsunuma, which led us to Wakao of Marusan Budoshu, who makes wine, and to grape grower Yano.
