About

Daikan Shikomi (brewed in the coldest period of the year, around the Daikan season in late January) is a sake made when the cold is best suited to brewing and the brewers can fully grasp the character of that year's rice and brewing conditions. So that the sake's natural flavor can be enjoyed as it was made, this genshu (undiluted sake) has no water added, is not heat-sterilized and is bottled raw as namazake, and is unfiltered (muroka). As new sake, it offers a lively, refreshing acidity and a pure sweetness.
