About

To make the most of the well-balanced character of Yamada Nishiki, we brewed this sake with the standard No. 9 yeast (Kyokai No. 9). The rich umami of Yamada Nishiki and the clarity of ginjo brewing come together in a dignified sake that pairs well with food. When young, the taste may feel somewhat firm, but with aging the depth of flavor and the clarity stand out markedly. Note: Namazake (unpasteurized) is shipped in winter only.
