About

The northern limit for growing Yamada Nishiki is said to be Fukushima Prefecture, but we asked a grower in Kurihara City, Miyagi Prefecture, and made Miyagi-grown Yamada Nishiki a reality. The Yamada Nishiki was cultivated and ripened in fields watered by the clear waters of the Hazamagawa (迫川) river, which flows from Mount Kurikoma. It was polished to a rice polishing ratio of 40%, and the skilled craftsmanship of Nanbu toji (master brewers from the Nanbu tradition) brought it together. The result is a Junmai Daiginjo that has earned numerous awards.
