The junmai designation at 65% polishing, an SMV of +8, and the description of a rich, umami-driven super-dry style point to restrained aroma, a full body, and very low sweetness, placing it in the jun quadrant. The low acidity of 1.3 softens the dryness a little, so richness is set moderately high.

About

Seikyo Junmai Cho-karakuchi is a rich, dry junmai sake made with only rice and water. In dry sake, fermentation continues until the sugars derived from the rice are reduced to a minimum. Because there is little sweetness to mask off-flavors and other imperfections, the character of the sake is expressed directly, so the brewing demands a level of precision that leaves nothing to hide behind. This sake is finished as a super-dry sake that makes full use of the umami of rice koji. It can be enjoyed from chilled to warmed (kan).
