About

Nabedana is a sake brewery that began brewing in 1689 (Genroku 2) at the gate of Naritasan Shinshoji Temple. It has since moved its brewery to Kozaki (神崎町) in Katori District, Chiba Prefecture, an area of open countryside, where it brews Jinyu and Fudo. Brewing was once left to a toji (master brewer), but since 1997 (Heisei 9) the company's own staff have handled every step, from steaming the rice and making koji to the moromi (fermentation mash), storage and bottling. Near the temple gate stands the company's directly operated shop, Nabeya Gengoemon (鍋屋源五右衛門), and in Kozaki the Jinyu Kura Matsuri (仁勇蔵祭り, brewery festival) is also held.
