About
Takahashi Shuzoten is a sake brewery in Akita Prefecture. It was founded in 1885 (Meiji 18) in what was then Chibata Village (千畑村), and in 1949 (Showa 24) it moved to its current location in Rokugo, Misato Town. For brewing water, the brewery uses Homon Shimizu (宝門清水), one of the Rokugo spring waters (Rokugo Yusuigun), which were selected as one of the 100 Famous Waters (Meisui Hyakusen). It brews with sake rice grown in Misato Town, including Misatonishiki. The brewery is also known for its own original yeasts, such as the Misato Setsuka yeast, collected from white lavender blooming in Misato Town, and a yeast derived from Yoshino cherry blossoms. Its flagship brand is Okushimizu, and its sake includes the Junmai Daiginjo Misato Setsuka.
