Amano Sake
天野酒あまのさけAmano Sake (also read Amano-zake) is a type of sake once brewed at Tennozan Kongoji Temple (天王山金剛寺) in Kawachinagano, Osaka Prefecture. Its origins go back to before the 15th century. Amano Sake is known for its distinctive two-stage brewing method (two-step mash addition), described as a way of promoting fermentation by using yeast at different temperatures. It is also notable for not undergoing the wood-ash treatment that was common brewing practice at the time, which is said to have given it a pure, clean taste. Widely known as a famous sake, it is said to have been enjoyed by the Sengoku-period warlord Hashiba Hideyoshi, and its history and tradition continue to be passed down today.
