Tosanishiki
土佐錦とさにしきTosanishiki (土佐錦) is a sake rice developed independently by Kochi Prefecture. It was created in 1994, and tests and improvements have been carried out to enhance its suitability for brewing. Tosanishiki has large grains and a low protein content, which gives it excellent characteristics for sake brewing. As a result, it absorbs water well and can be brewed into light, dry (tanrei karakuchi) sake with few off-flavors and a clear, crisp taste. Because of these characteristics, it plays a very important role in sake brewing in Kochi Prefecture.
