Volume percent
容量パーセントようりょうぱーせんとVolume percent (容量パーセント) is a measure of the proportion of a solute in a given liquid. It is generally expressed as the volume (in ml) of solute contained in 100 ml of solution. In the case of sake (seishu), for example, the alcohol content, shown as "degrees" (度数), indicates how much pure alcohol is contained in 100 ml of sake. Specifically, if the alcohol content of a sake is 15%, 100 ml of that sake contains 15 ml of pure alcohol. Sake's extract content (エキス分) is also expressed per 100 ml of sake, indicating the amount of extract it contains (usually measured by weight). By contrast, the rice polishing ratio is expressed as a weight percent and is used to show how far brown rice has been milled into white rice. It indicates the weight of white rice obtained from 100 g of brown rice, so the more the rice is polished, the lower the value becomes.
