In Yamanashi Prefecture, wine culture exists alongside sake, and a small number of distinctive sake breweries operate here.
Yamanashi does not have a large number of sake breweries, but those it has practice locally rooted sake brewing, drawing on clean, pure water systems. In a region where diverse drinking cultures coexist, brands that value individuality can be found.
Sake of Yamanashi
Known as a renowned wine-producing region, Yamanashi is also well suited to sake brewing, with sake breweries scattered along the clear streams of the Fuji River, the Fuefuki River, and the Kamanashi River. The subterranean water (fukuryusui, water that flows underground) from the Southern Alps and Mount Fuji systems is soft to medium-soft, giving the sake a gentle, crisp drinking character. Many breweries pay close attention to their rice, from growing it themselves to polishing it in-house.
