About
Made from Yamada Nishiki sake rice grown in Iga-Ueno and polished to a rice polishing ratio of 40%. After bottling, it is aged for over one year in a low-temperature refrigerator kept at 0°C before being shipped from the brewery. The palate is clean and light, while the umami of the rice spreads smoothly. It blends with a pleasant acidity and fades away gently. This junmai daiginjo can be enjoyed across a wide range of temperatures, from chilled to room temperature to lukewarm (nurukan).
