Kun-shu — aromatic and light

A 40% polished daiginjo described as fruity and fragrant points to high aroma. An SMV of +3 and the dry, crisp wording, with hard-water brewing that keeps the umami from weighing it down, suggest low sweetness and a moderately light, crisp body.

About

Fruity flavor and a rich, fragrant aroma. This delicate yet striking sake has a light flavor that does not overpower the sashimi of white-fleshed fish such as sea bream (tai) and amberjack (kanpachi), while still offering a juicy quality. It is a standout daiginjo that we, the producer, confidently recommend. We are grateful to have the patronage of well-known hotels. It is always stored in cold storage, so its quality is maintained without change. For this daiginjo we use Yamada Nishiki, a sake rice widely regarded as the finest, and this allows us to successfully express a solid umami. Brewed with water rich in magnesium and calcium, a so-called hard water (nearly identical in water quality to Nada no Miyamizu), this sake overcomes the lack of kire (clean finish) that the deep body of a daiginjo can sometimes cause, resulting in a dry daiginjo.
