About

From its founding, the brewery made a carefully crafted junmai sake using only rice and rice koji. By raising the rice polishing ratio, it succeeded in drawing out the natural umami inherent in the rice. Even while drawing out the rice's umami at a sake meter value (SMV) of +3, the sake was made smooth to drink, leaving no unnecessary sweetness on the finish. This clean finish (kire) earned a strong reputation, and today it has grown into the brewery's flagship sake, requested by many customers.
