Flavor profile So-shu
So-shu — clean and light
The text's emphasis on clean, sharp acidity and a refined rice umami, together with 60% polishing and SMV +5, points to a restrained aroma, a light-to-medium body and a fairly dry profile, placing it in the so (crisp) type. Rice character from the 祝 variety adds some richness.

About
This sake comes from a small-batch, carefully made local brewery at the southern tip of Kyoto Prefecture. All of the rice used is Iwai, Kyoto's brand rice. Its clean, crisp mouthfeel lets the character of the rice come through, and it is marked by its acidity. It can be enjoyed in many styles, from chilled to warmed or hot sake (kan), according to preference. It also pairs well with food, with a flavor that does not tire the palate. Gold, Junmai category, International Wine Challenge 2021 Sake Division.
