About

Long called "Gori Gori no Sato" (the village five ri from both Kyoto and Nara), Joyo sits five ri from Kyoto and five ri from Nara. The area enjoys a mild climate and abundant natural surroundings, with the Kizu River's underground flow (fukuryusui) running beneath it. Joyo Shuzo draws water from a depth of 100 m and uses carefully cultivated sake rice, putting quality first in every stage of brewing. After pressing, the sake is bottled unfiltered (muroka). Each bottle is pasteurized by warming in the bottle (binkan hiire), and quality is closely managed through refrigerated bottle storage. This is a dai-karakuchi (very dry) sake with a calm aroma, a fresh and refreshing palate, and a crisp, clean finish. The first sip after opening is fresh and vivid. Over time it settles and becomes more unified, reaching very good balance. It pairs well with a wide range of dishes and can be enjoyed from chilled to hot (atsukan). It is an everyday classic with excellent value for money.
