Flavor profile Jun-shu
Jun-shu — rich and umami-driven
The genshu style and the description of thickness, lingering finish, and robust, full flavor point to a rich, full-bodied profile. Aroma is restrained, and sweetness reads as moderate given the umami-forward texture.

About
A sake made with Misatonishiki, a premium sake rice from Akita. The rice is polished to a rice polishing ratio of 50% using flat polishing (henpei seimai), the polish that best brings out the potential of Misatonishiki. Birodo is the most full-bodied and lingering, powerfully structured expression in the Karazu lineup. Also, as most of the cultivation area has shifted to pesticide-free farming, the quality has improved in recent years. It offers a full, rounded flavor right after pressing, and also has long-aging potential comparable to Ash Earth.
