About

The more you come to love sake, the more you will want to brew with this sake rice. Kikusui, the brewery, is no different. Our dream was to make sake named Kikusui from Kikusui, a long-lost sake rice variety that once existed. Reviving this sake rice meant overcoming many trials, and we worked through them one after another. We were able to create a confident sake with rich umami and a full, fragrant aroma, worthy of this sake rice and the scale of that dream. A junmai daiginjo with a rich, fragrant aroma and a deep, soft, dry character. The Kikusui sake rice, which had excellent qualities but had disappeared for a time, was revived from just 25 seed grains (tanemomi). Brewed as junmai to draw out the full strength of the rice. Enjoy it lightly chilled for its rounded flavor.
