Junmai daiginjo polished to 50% with Omachi rice, and the text cites a refined sweetness and floral aroma, so aroma is high. The nigori texture and umami give a fuller body, offset by the low 13-14% alcohol, which places it near the juku boundary.

About

A nigori sake of junmai daiginjo grade, made with Omachi rice polished to a rice polishing ratio of 50%. Nigori sake has traditionally been mostly futsushu (ordinary sake) made with large amounts of brewer's alcohol and sugar. At our brewery, we have been working to develop nigori sake with a higher degree of polishing, and have now finally created a nigori version of junmai daiginjo. As a junmai daiginjo, it is very delicate and refined, drawing out the umami of Omachi rice within an elegant flavor while still offering a satisfying body. The alcohol content is kept on the lower side, at 13 to 14%, to make it easier to drink. We recommend serving it well chilled. You will be able to appreciate its refined sweetness and vibrant aroma.
