About

Made with 100% high-quality Yamada Nishiki grown in Okayama, known as the land of clear skies (Harenokuni), and polished to a rice polishing ratio of 60%, this Tokubetsu Junmai sake was brewed with particular attention to its koji mold and yeast. The koji is a high-quality type designed specifically for junmai sake, producing a clean, transparent flavor. The yeast is a blend of Kyokai No. 1801 and Kyokai No. 9, balancing aroma and flavor in harmony so that the sake never becomes tiresome to drink. Crafted with the Bitchu-ryu brewing techniques of our toji (master brewer), who carries on the Bitchu toji tradition, this sake has won numerous awards. We believe the awards recognized its balance of aroma and flavor, its refined taste, and its clean finish. We hope you will enjoy it with small dishes, such as sashimi of fresh Seto Inland Sea fish, including sawara (Spanish mackerel), shako (mantis shrimp), and tai (sea bream), as well as delicacies such as debira-karei (dried flounder fin), pounded mountain yam dressed with mentaiko (spicy cod roe), and octopus and taro simmered until tender. A Message from the Brewer: Toji Tatsuro Okazaki A sake made with Yamada Nishiki, a sake rice, polished to 60% and brewed with careful handmade methods. While producing a bright, fruity ginjo aroma, we finished it as a deeply flavorful sake that brings the umami of the rice to the fore, a quality not found in our previous Yamada Nishiki sake.
