About

From "Odayaka" (穏) to "odayaka" (calm) Protecting is also a form of moving forward. We live through food, food through the soil, soil through history, and the planet too. Looking not only at today but at what came before and what lies ahead, we see what we must protect. Yet this does not mean retreating from the past; it means moving forward into what is to come. To protect is to advance. That is why we cherish the land and the rice fields. Odayaka Junmai Daiginjo Made with organically grown Yamada Nishiki from Mitsuhiro Yasushima (安島美光) in Iwaki, Fukushima Prefecture. At our brewery, the rice was polished to an exceptional 50 percent and brewed with generosity. At first, smooth. The excellent quality of the water from our own mountain spring comes through, letting you enjoy a bright aroma and flavor at the same time, with a clean finish. Like breathing in mountain air, its refreshing drinking feeling makes it an ideal sake to enjoy with meals.
