The kijoshu method (sake used in place of water), kimoto starter and wooden-tub brewing point to a sweet, dense, umami-rich body. The 17% alcohol adds weight, while aroma stays modest with a mature character, placing it in the juku quadrant.

About

Beyond natural sake. Senkin Organic Nature is a super-natural sake revived through ancient techniques. Made with nothing added (mutenka, meaning no additives) and only rice, rice koji, and water, it draws fully on the energy of organic Kame no O rice, a variety returned to its original form from seed, and creates a world unique to Senkin. The philosophy of 'nature' can cross the walls between different genres and connect them. Even foreign cultures such as natural wine (vin nature) and craft beer can be connected through 'nature', and this may make all craftsmanship borderless. A journey through time that follows the natural brewing of Nature, letting natural time take its course. The second release, 'Nature W: Kijoshu', followed as a sequel in autumn 2020. Specifications: Kijoshu; super-ancient brewing method; no added yeast (kuratsuki yeast, native to the brewery); brewed in wooden tubs (kioke); kimoto shubo (traditional yeast starter)
