About

"Senkin Issei" (せんきんいっせい), meaning "the single voice of the crane," a phrase for a decisive word from someone of authority. Blending the commanding presence and refinement that the name embodies, this is a new frontier for Senkin. Using Yamada Nishiki grown at Domaine Sakura, polished to 35% for both koji rice and kake rice, we aimed to draw out its potential to the fullest. Striving for elegance throughout, we placed a refined sweetness at the core of the sake's character. Senkin Issei. Within a single drop, we have captured the new trajectory the crane traces. The potential of Yamada Nishiki is immeasurable. In particular, the energetic presence of Yamada Nishiki grown in this Sakura terroir has, now in its fifth year, come quite close to the home-region Yamada Nishiki. Beyond the way the late-ripening variety's rice dissolves, the presence of the rice carries through to the finished sake, and it is impossible not to feel the thoroughbred quality. Its restrained yet floral aroma reflects a dignity that does not overdo itself. Abundant in fruit, it can be savored as if chewing on the energy of Yamada Nishiki.
