Kun-shu — aromatic and light
A 40% polished daiginjo with a subtle ginjo aroma and smooth texture, placing it in the light aromatic kun style. SMV +1 with low acidity of 1.1 suggests a soft, mildly sweet impression that the light astringency on the finish balances.

About
Smooth on the palate, with a subtle ginjo aroma and a light astringency that tightens the finish. Made with contract-grown Joetsu rice (Koshitanrei) and Yamada Nishiki from Sanda, Hyogo Prefecture. Koji made using the futa-koji method. Available in winter only (November to January).
Brewed with well water drawn from a source in the satoyama (village hills) area and contract-grown Joetsu rice, this Koshitanrei sake is made using the traditional futa-koji (lidded koji-making) method. It has a smooth mouthfeel and a subtle ginjo aroma, and a light astringency tightens the finish.
