A 40% polished daiginjo points to a fragrant, floral profile, while SMV +3 and 16% alcohol suggest a light, clean body with restrained sweetness. The free-run (fukuro-tsuri) drip method described in the text supports a refined, transparent character.

About

Made from 100% Yamada Nishiki and filtered underground water (fukuryusui) from the Tedori River, which flows from the sacred Mount Hakusan, this daiginjo was brewed by an experienced toji. It is the finest daiginjo this brewery produces. Rather than applying any pressure when pressing the mash, the sake was collected only as it dripped from a hanging bag (fukurozuri). Each drop of this sake is truly a golden drop.
