This kimoto junmai genshu with 80% polishing and 20% alcohol, and a text that stresses umami, depth and a year of aging, points to a restrained aroma, full body and rich texture. Sweetness is moderate, implied by the umami-driven profile rather than stated outright.}

About

We made this sake with rice that is close to brown rice, so please savor its umami. For about one year, from the day the new sake was pressed until today, we tasted it again and again, changing the serving temperature. Each time it touched the palate, we were captivated by its indescribably complex character and the depth of its flavor. We released it as genshu (undiluted sake) so that we could deliver the sake just as it was made. Please enjoy it in a variety of ways.
