Kimoto brewing, undiluted genshu at 20% alcohol, and the description of umami, complexity and about a year of aging point to a full, rich body. Ginjo-grade polishing at 60% suggests moderate aroma, with a crisp, dry-leaning finish.

About

Although it is a genshu (undiluted sake), it has been brewed to offer a clean finish and umami. From the day the new sake was pressed until today, about one year, we tasted it again and again, varying the temperature. Each time we took a sip, we were captivated by the complexity of its character and the depth that unfolded in its flavor. To deliver the flavor exactly as it was brewed, we released it as a genshu. Please enjoy it in a variety of ways.
