About

This is a Junmai Ginjo made with Dewa Sansan, a sake rice independently developed by Yamagata Prefecture, as the raw rice. It uses Yamagata Yeast as the yeast and Yamagata's original koji mold, Oryze Yamagata, as the koji. Each ingredient is Yamagata-grown, a style the brewery calls "Jun Yamagata-san" (pure Yamagata-grown). The aroma is gentle and subtle. On the palate it is soft and plump, with a smooth texture and a broad, well-rounded flavor.
