About

Daiginjo and other premium sake are usually made with sake rice such as Yamada Nishiki or Aiyama, varieties grown specifically for sake. Sake rice yields fewer grains per tan (a unit of paddy area) than ordinary rice and requires advanced cultivation techniques, so its price is relatively high. We wanted to offer sake fans, at a relatively affordable price, a sake that makes people exclaim, 'This sake is delicious!' Could we keep the price down by switching the raw material, brown rice, to table rice? After several years of trial and error and dedicated study, we succeeded in creating a Junmai Daiginjo.
