About

I believe that music has the power to shape the history of human society and to create its future. We who make sake for a living also firmly believe that a delicious sake capable of moving people is, like art, an indispensable presence in human society. This time, we were approached by the Japan Century Symphony Orchestra and took on this unprecedented project. Kōkyōkyoku Dassai Migaki was composed by Kaoru Wada, who is active on the world stage, and performed under the baton of Norichika Iimori, chief conductor of the Century Symphony Orchestra, and the piece was completed. Furthermore, by letting the sake in Dassai's fermentation tanks listen to that recording over a long period, the unprecedented sake Kōkyōkyoku Dassai Migaki was completed. Dassai's sake brewing takes place in a world of minute differences. How this recording affected the moromi (fermentation mash) during fermentation is the question. This is the moment when music and the fermentation culture of Dassai intersected. Hiroshi Sakurai
