About

Low-alcohol sake has been a challenge for Asahi Shuzo for twenty years. The brewery has tried many times and been repelled by high barriers each time. Adjusting the alcohol by adding water did not produce a taste and aroma that satisfied them. In the early stage of fermentation, the brewery applied even more delicate temperature control and kumimizu (water-drawing) management than in Migaki Sono Saki e (Migaki Sono Saki e being an earlier release). As a result, a sake whose alcohol content stayed below 12 percent even at the final stage was completed. After pressing, no water is added at all, and the sake is bottled as it is. The result is a sake with only 11 percent alcohol that nonetheless has a high aroma and the distinguished character of a Junmai Daiginjo.
