About

The finest moromi (fermentation mash) produced that year is packed into sake bags and hung to drip, and the sake that drips through is carefully bottled. From this, only the middle portion of the pressing, known as nakadori, where the flavor is well balanced, is released from the brewery, and just 500 bottles a year are made available. In addition, genshu (undiluted sake) aged at low temperature for more than three years is shipped directly from the brewery. The name Fuku Fuku plays on the character 福 (fuku) twice, combining the 福 of Fukui (the prefecture) and the 福 of kōfuku (happiness).
