About

A junmai sake made from Okayama-grown Omachi rice and brewed using bodaimoto (traditional yeast-starter method), said to be the oldest sake brewing method in Japan. The name "GOZENSHU9 (NINE)" reflects the young brewers' spirit of never feeling they have done enough and always seeking to go one step further, "mō hitotsu ue" (one step higher). The number 9 is the highest single digit, and it expresses the wish to create the finest flavor the brewers are capable of at present. With a calm character and a smooth mouthfeel, it pairs well with white-fleshed fish sashimi, and it is also enjoyable with cheese or eel.
