The 60% polishing, low acidity (1.3) and SMV +2 point to a soft, gently sweet, rice-driven profile, and the text's soft, deep flavor from wooden kioke brewing supports a restrained aroma with a fuller body.

About

Traditional brewing in wooden vats built in the early Showa era, a method with a long history. Managing the moromi (fermentation mash) is labor-intensive and far from efficient, and this work draws even more passion from the toji (master brewer). This is a carefully crafted bottle, made while reconsidering the question of what it means to make things (monozukuri). Soft, with a deep and layered flavor.
