As a junmai ginjo polished to 50%, it should show a fragrant aroma. SMV +1 with acidity 1.7 suggests a balanced, moderately light body, while the origarami lees add a soft texture and gentle sweetness.

About

Harugasumi first brewed sake with Misatonishiki in the winter of 2006 (Heisei 18). From a paddy of about 3 tan (roughly 0.3 hectares), it harvested 20-some bales (tawara) of Misatonishiki, milled them to a rice polishing ratio of 50%, and brewed Junmai Ginjo using Kumamoto Yeast (KA-4). Since then, the area planted with Misatonishiki has grown more than 30-fold, and brewing this Junmai Ginjo has continued.
