The daiginjo-grade 50% polish and the melon and apple aroma described point to high aroma, while the genshu umami adds richness. SMV +2 and 15% alcohol keep the sweetness balanced and the body fresh and light.

About

Ichidaimisen Junmai Daiginjo Nama Genshu is characterized by a clean, fresh mouthfeel while retaining the powerful, rice-driven umami typical of nama genshu (unpasteurized undiluted sake). Made with Koiomachi and Hattan Nishiki, two rice varieties representative of Hiroshima, it draws out the rounded rice umami characteristic of Junmai Daiginjo, along with aromas of melon and apple. By setting the alcohol content to 15%, we created a fresh, easy-drinking finish. We invite you to enjoy Ichidaimisen Junmai Daiginjo Nama Genshu, the first new sake released from the brewery this year.
