Junmai ginjo at 50% polishing, nama and nigori with Yoshi-fu rice point to a fresh, moderately aromatic profile with a lively, sparkling-like prickle and pleasant acidity. The umami is present but the lightness dominates, so the body sits slightly below center and sweetness stays modest.

About

Message from Toji Koiwa In Kamikawa Town, where the Ryokkyu-gura brewery stands, the number of days when the maximum temperature falls below -15°C is on the rise. On bitter cold dawns, water vapor in the air crystallizes into ice crystals (hyosho), and the countless glittering crystals drifting through the air create a fantastical scene that came to be known as diamond dust. This Junmai Ginjo brings out the full character of Ginpu, a rice variety that offers a rich, rounded umami. The sake is combined with moromi (fermentation mash), and its fresh aroma, layered depth, and pleasant acidity are sealed directly into the bottle. True to its name, Hyosho Nigori delivers a sparkling, refreshing sensation that bursts softly on the palate.
