About

[Message from Toji Koiwa] The brewing season has finally reached its midpoint, and as data on this year's sake rice characteristics and properties has accumulated, the quality of the sake has become more stable. This time we used Suisei rice grown in Nagayama-cho, Asahikawa City, Hokkaido, polished by flat polishing (kenpei seimai), a special rice-polishing method. Because it removes protein more efficiently than conventional polishing methods, we aim for a clean sake that hardly seems to come from a rice polishing ratio of 60%, with an aroma reminiscent of white grapes. This bottle, perfect for this season, captures the shine of a comet. While enjoying the joy of brewing with our own hands, we will continue to pursue new flavors in sake.
