The daiginjo designation, 38% polishing of Yamada Nishiki, and the brewery's description of a floral ginjo aroma and light, refined palate point to an aromatic, light style. An SMV of 4 to 6 with low acidity of 1.3 suggests a soft, mildly sweet impression.

About

Founded in 1882 (Meiji 15), Kunimare Sake Brewery is the northernmost sake brewery in Japan. This daiginjo is made with clear water from the Shokanbetsu mountain range in the bitterly cold Hokkaido, and with Yamada Nishiki sake rice polished to 38%. It is fermented slowly at low temperature over an extended period. It has a vivid ginjo aroma and a mellow, elegant flavor, making it a premium sake.
