About
Fukuoka-grown Yume Ikkon rice is polished to a 40% rice polishing ratio and brewed with groundwater from the headwaters of the Onga River (遠賀川). In February, when the cold is severe, the moromi was hand-pressed in bags (fukuro-tsuri), and only the first drops (tare-hajime) were collected in tobin. Only the finest of these undiluted sake were selected and bottled. Its fragrant, bright acidity and refined palate make it truly a work of sake art.
