About

Made with 100% Koshitanrei grown under the Toki to Kurasu Sato-zukuri certification system, this renewed junmai daiginjo contains only rice and rice koji. The aroma of the rice is fragrant, and the flavor is soft and umami-rich. Toki to Kurasu Sato-zukuri Certification System is a program that certifies safe and delicious Sado rice. It covers rice grown with reduced pesticides and chemical fertilizers, using farming methods that nurture living things. The system aims to build a way for people and the Toki (Japanese crested ibis) to live together, starting from agriculture. The sake rice for Manotsuru Miku is Koshitanrei certified under this system, contract-grown by Aida Rice Factory in the Niho district of Sado. Koshitanrei (a sake rice developed in Niigata) was created by crossing Japan's two leading sake rice varieties, Yamada Nishiki and Gohyakumangoku. Developed over 18 years from its initial concept by Niigata's sake brewing industry working together, it debuted in 2006 as a promising sake rice. Sake made from this rice combines the clean, light character of Gohyakumangoku with the full, rounded flavor of Yamada Nishiki. At Manotsuru, Miku made from Sado-grown Koshitanrei polished to 35% was first offered in spring 2009. As its name suggests, its flavor is aromatic and refreshing, evoking the arrival of a fruitful harvest. Unlike the matured, mellow character of Manho, Miku is fresh and highly aromatic. Please enjoy its appeal.
