About

Made with spring water from Mount Tsukuba and carefully selected sake rice. A Junmai Ginjo with a rice polishing ratio of 55%. Careful brewing, with the sake pressed using the traditional fune (wooden press) and bottled unfiltered as shiboritate (freshly pressed sake). Because ours is a small brewery, we were able to pasteurize the sake in the bottle (bin-hiire, bottle pasteurization).
