About

Brewed in an extremely cold brewery by the brewery owner, who is also the master brewer (toji), using traditional methods, this is Sadaijin Junmai Daiginjo. The finished moromi (fermentation mash) is placed in sake bags and hung to drip. Drop by drop, the liquid gathers and turns into an amber-colored sake. A fresh shiboritate (freshly pressed sake) with a slight lees haze and a fragrant aroma is bottled unpasteurized, just as it is.
