About

Made with underground water (fukuryusui) from the foothills of Oze and carefully selected Gunma-grown sake rice, polished and fermented slowly at low temperature over a long period, this is Sadaijin Junmai. The moromi (fermentation mash) was carefully fermented and pressed slowly. The freshly pressed genshu was collected and left to rest gently in tanks, and only the clear liquid on top was drawn off and bottled.
