About

Crafted at the foot of Oze, this Junmai Ginjo is made with cold groundwater that seeps through the earth (fukuryusui) and carefully selected Gunma-grown sake rice, Wakamizu, polished with care. It uses a yeast starter (shubo) normally reserved for daiginjo, and is brewed by the brewery owner acting as toji (master brewer) using traditional methods. The rice's savory character comes through in a rich, fragrant aroma and a light, clean palate (Tanrei). Served slightly chilled, it is crisp yet full and mellow on the palate.
