The ripe, fruity sour aroma in the description, together with the kimoto method, genshu 19% and 85% polishing, points to a rich, aged-style juku profile. SMV +5 and acidity 2.3 keep sweetness moderate despite the umami-driven sweet impression.

About

Shinriki rice, the rice at the origin of Sempuku, is polished to 85%, close to the rice polishing ratios of the Meiji and Taisho eras. It is brewed slowly and carefully using kimoto (traditional yeast-starter method), the mainstream brewing method of that time. This is a bottle filled with our passion for sake brewing, especially recommended for those who are particular about sake. A gentle aroma of ripe fruit, sweet and tart, rises softly. A striking, strong acidity is followed by umami, sweetness, astringency, and bitterness intertwining in a complex, rich flavor. It can be enjoyed chilled, at room temperature, or lightly warmed, according to your preference.
