About

In pursuit of the finest Yamada Nishiki in Japan, the brewery chose Yamada Nishiki grown in Akitsu, Kato City, a grower who each year cultivates and harvests the best Yamada Nishiki from within the Special A district of Hyogo Prefecture. The rice was grown using the V-shaped (hen no ji-gata) cultivation method, organic fertilizer, and drying on traditional racks (inegi-kake), with as much care and effort as possible, to produce Yamada Nishiki of the highest quality. The brewery describes it proudly as 'the ultimate flavor of sake,' and it is a confidently crafted junmai daiginjo that can truly be called a rich masterpiece of top-grade sake. The aroma is worthy of an ultimate junmai daiginjo, with a smooth, mellow flavor.
